Cheesecake -Shortcut
Welcome back!
Yes, here is the word ‘cheese’ again. I love cheese in its many and varied types. The only trouble with cheese cake is that I am Diabetic. So it is definitely not something that can be indulged in often.
Well, not liking that limitation, I figured a way to make a cheese cake that is not as expensive with the calories. Not, it is not sugar free, it is lower in fat and some sugar calories though.
Start with one small container of diet whipped topping, thawed completely.
Two packages of Neufchafel cheese (not sure I spelled that right) softened until it is almost runny.
One package of unsweetened lemonade of one brand or another.
Two packets of sweetener - any brand
Mix all ingredients together until thoroughly blended. spread into a pan, with or with or without a graham cracker crust. (Remember that the crust also has fat and sugar in it, so if you want to cut down calories, cut out the crust.)
Chill overnight. It tastes wonderful. It has a little bit of a bite from the lemon, cheesecake should not be a bland sweet. It should have some presence.
It is quick, easy, and NOT expensive.
